Chef Paolo Mannis, from southern Italy, discovered his passion for food at 30. He honed his skills at Da Vittorio, a three Michelin star restaurant, then worked at prestigious venues like Il Lago and The Tasting Room. Joining Jumeirah Group in 2019, he now leads SAL in Dubai, infusing traditional techniques with top-notch ingredients to create tantalising Iberian flavours.
